More recipes I'm trying from Contessa and Rachael Ray

Here's a tentative food map for our week. Things are likely to change because of the holiday and also because we'll be out sightseeing with my in-laws on their first visit to the Greater Boston area.

Sunday
breakfast--3/4 cup of quick oats and sprinkled cinnamon (to taste) cooked with 1 cup of vanilla Silk for in the microwave on high for 3 min., 45 secs., then cooled with 1/2 cup of natural applesauce (same every day, unless otherwise noted)
lunch--we were trying to console ourselves after a busy weekend, so we had black bean and avocado salsa and chips (yes, we ate the whole thing!) while we watched the Oscar-nominated "family" movie August Rush together (it had some language and premises I didn't like, but was fairly wholesome)
supper--Papa Gino's Pizza Rustica. As I've written before in this blog, the Asiago cheese is what it's all about!

Monday
lunch--Cavatappi with Spinach, Beans and Asiago Cheese, Roasted Vegetables and Quinoa Salad
supper--Barefoot Contessa's Radishes with (Herbed) Butter and Salt as the appetizer; Rachael Ray's menu from her "30-minute Meals" "Home Improvement" episode: Italian Mini Meat Loaves with Mac and Three Cheeses, Seared Greens with Red Onion and Vinegar. (Can you guess what veggies we got from the CSA this week??)

Tuesday
lunch--Chile-Brined Roasted Pork Loin, Two-Corn Polenta with Tomatoes, Basil and Cheese, spinach salad with almonds
supper--Mexi-Lasagna (a selection from Pillsbury One-Dish Meals that you can make ahead and freeze! I add frozen corn to the recipe as written on today's other posting), broccoli, bell peppers and veggie hummus

Wednesday and Thursday
leftovers (Sorry, but I'll be busy cleaning the house and eating down stuff to make room in the fridge and freezer.)

Friday
breakfast--Jimmy Dean Breakfast Casserole
lunch--we want to take the in-laws to the Harraseeket Lunch & Lobster Co. when we go up to the L.L. Bean Flagship Store
supper--TBA seafood from a local joint

Saturday
breakfast--Baked Oatmeal (I use cinnamon applesauce)
lunch--probably the Food Court at the Prudential Center in Boston (we are going in to take the Duck Tour!)
supper--we'd like to treat our in-laws to dinner at the Village Restaurant. They sent us a gift card there after my husband, S, passed some big important certification exams at work back in the spring. We had a wonderful date night!
